Double Boiler Chocolate Pudding

The better the quality chocolate and vanilla the better this rich pudding will taste. This is a thick pudding created to be served warm.

2 or 3 squares good quality unsweetened chocolate

1 cup milk

1/2 cup sugar

1/2 teaspoon cinnamon

1/8 teaspoon salt

3 large eggs

1 tsp. good quality vanilla extract

Cream for topping (optional)


Place enough water in the saucepan base of the double boiler to barely touch the bottom of the porcelain insert. Bring water to a gentle boil and lower heat to medium simmer. Place porcelain on top of saucepan.

In top part of the double boiler place unsweetened chocolate, milk, sugar, cinnamon and salt.

Heat over simmering water until chocolate is dissolved.

Beat with a whip or hand beater until smooth.

Add 3 unbeaten eggs all at once and vanilla extract. Beat 1 minute.

Cover and cook over gently simmering water for 40 minutes. Check to be certain water does not boil out.

Place in individual ramekins or serving dishes. Serve warm with cream or another sauce of your choice on top.

Serves 4.
